30-Day Paleo Challenge: Day 20
Today wasn’t as challenging as I expected. I am so “on” I don’t even realize it. Macho, right? Pumped and motivated to succeed. Hard work. Positivity. GO.
Definitely some weird timing and long stretches between these meals:
- Breakfast: 2 hard-boiled eggs, 1 banana (4:30am)
- Snack: Iced Venti Americano, 1 Larabar (8:30am)
- Snack: almonds (1:30pm, time change 1 hour ahead)
- Lunch: deli roast beef, carrots, blueberries (3:00pm)
- Dinner: Chipotle - burrito bowl with chicken, steak, lettuce, tons of salsa and guacamole (6:00pm)
- Snack: a couple of blueberries, almonds and carrots, coffee (8:30pm)
My flights were delayed for several hours this morning (Chicago is notorious for weather delays), so I spent a lot of time in the airport. I expected some form of delay and came prepared with almonds and a Larabar. Kept me in line.
Chipotle was so delicious. If you know me, you know Chipotle is my favorite fast food restaurant. It’s paleo-friendly, too. I ate too much, but it was perfect after a day of delays. There are also tons of food choices and grocery stores nearby, so eating well won’t be as challenging as I thought. YES.
Unrelated side note: I love rural New York. You can feel the history. Time-tested trees stretch out over the roads. Industrial suspension bridges hold land masses together. Old, sturdy homes built by hand for generations. Proud to be an American.
